Welcome to the weekend, and how lovely was it to have that extra hour of sleep?! I have to say, I felt super productive when I woke up of my own accord at 9:00 am, I'm just going to pretend that happens on a regular basis. Last weekend I popped up to London for the Saturday, did some shopping and caught up with some friends I hadn't seen in well over a year. Our night out was followed by a 6:30am start and a 4 hour drive to a family Christening in Devon... my head still hurts. It's taken me pretty much all week to recover form the exhaustion, but I am pleased to report that this weekend has arrived blissfully plans-free. I have got the house up to scratch, made a cracking moussaka (if I do say so myself) and had a whirl at filming my first ever video for GnR... stay tuned for the most confused accent you have ever heard. Although at the moment it's 16% uploaded with 3773 minutes to go, so we'll see if that ever happens! In the meantime here's something a bit more familiar. A FAMILY RECIPE: POST-WAR MOUSSAKA

I have a little black recipe book that sits in my kitchen, it's hand written and it's loving filled with recipes I have stolen from my granny's overflowing cookbook collection. The bulk of the recipes I pinched come from her handwritten selection, so I assume that they have been passed down through quite a few generations. One of my favourite things about this collection of recipes was that there are a couple of dishes that feature war-time and post-war versions, and the ingredients differ accordingly. Whenever I stumbled across these I made sure to note them both down, just because there is part of me that never wants that detail to be lost. A few of you may have seen on snapchat that I cracked out the post-war moussaka this week and it was seriously tasty, so I thought I'd share it with you:

Par-boil the potatoes and leave to cool. Slice the aubergine into rounds and fry with a little olive oil to soften, set aside. 

Sauté onions and add the lamb mince. Season with thyme, parsley, bay leaf, salt and pepper. Cook until the meat has just browned. Add beef oxo cube, tomato puree and a splash of water. Mix and set aside. 

Start layering a buttered oven dish (lasagne style):

  1. Sliced potato
  2. Mince meat
  3. Sliced aubergine
  4. Tinned tomatoes
  5. Sliced Potato

Melt butter in a pan and add a generous amount of flour, mix until a smooth paste is formed. Add milk and a sprinkle of nutmeg. Continuously stir until thick Béchamel sauce has formed.

Add the sauce as the final layer of the moussaka and generously top with parmesan and/or cheddar cheese. 

Bake at 180C for 40-60 minutes. Enjoy!

SMOKIN' ACES

Not so much an 'eats' as it is a 'drinks'... but really, who's being picky?? My lovely uni friend paid me a visit a couple of weeks ago and this is where we ended up. Elise is the cocktail connoisseur so you know you've found somewhere good when she's impressed... and she was impressed. 

It was one of those places where there was no real menu, you just stepped up to the bar and said 'Can you make me something gin based, and spicy?', and voila, it appeared in front of you. There was minimal bottle juggling (a big plus in my books) and our drinks came topped with some exquisite ice sculptures (an even bigger plus in my books). Also, the best screaming orgasm I have ever had... we all know that's a drink, yes?

When I was at university I could sit for hours on my bed surrounded by all my books and absolutely nothing would get done. This weekend has been been lovely and quite so this evening I am taking the opportunity to run myself a bath and indulge in some serious me time. I've got a little collection of nourishing and cleansing products that I will be putting to use. I think I can finally consider myself settled in to West Country life when my Sunday routine of roast and pamper is back in action.

This week I'm trading in my usual food diary for a snippet called Bournemouth eats. As I explore and get settled I thought I'd share some of my favourite eats and drinks just in case you ever find yourself round these parts. 

Introduced to me by my new colleagues, this quirky cafe brings back all the Brighton feels and made me right at home. It has a wonderful atmosphere, excellent food (2 for 1 fry-ups), and as I've just discovered, great website hosting taste! 

 

5 THINGS THAT MADE ME HAPPY THIS WEEK

  1. Pushing the new site live and getting all your lovely feedback, you are all too kind! Honestly, I have had the biggest smile all week! 
  2. Driving home and successfully navigating my first roundabout.
  3. Booking tickets for my first Christmas back home in 4 years. Can it be the holidays now please?
  4. Successfully upgrading from my old Samsung- new phone is en route!
  5. Purchasing the beautiful Country Living Modern Rustic magazine... although, this has not helped to reduce the amount that I research bathroom tiles.

It is finally beginning to resemble something you could call summer in the UK! I braved tight-less legs for the first time this week, I wore sunglasses for an entire afternoon, and for the first time this year I felt like it might just be acceptable to start thinking about buying a new swimsuit.  Windows have been flung open, cold dinners are on the menu and it's not long before I will be stocking my cupboards with all the G&T making paraphernalia. With the nights getting warmer and staying light past 9pm I plan to spend the next two months making the most of Brighton while I'm still here and it's at it's best!

FAVOURTIE RECIPE


Tomato & Port Sauce

  • 2 Tomatoes
  • 3 tbsp Balsamic Vinegar
  • Dash of Port
  • 3 tsp Sugar
  • Salt
  • Pepper
  • Olive Oil

Score the tops of the tomatoes with a cross. Place them on a baking tray, cover with olive oil and season with salt and pepper. Roast at 180 C until soft and slightly blackened. Move tomatoes into a saucepan, mash down with fork. Add Balsamic, Port and Sugar and simmer for 10-15 minutes until thickened. Serve a sweet addition to a red meat or savoury dish.

  3. Something finally happening in Game of Thrones! I was almost beginning to lose interest.
  4. Having fresh white flowers in the house again!
  5. Learning how to decipher all my medical records... one day it will take me less than two hours to make sense of my immunisation history.

This week's blog content jumps straight to the Sunday Journal. I don't know how I've managed it, but I've only ended up working 2 days this week. I got to enjoy all the good things that come with a bank holiday, and naturally slip into ALL my bad food habits again. I got to make a sneaky day trip up to London - spend my morning learning about perfumes and my afternoon wandering through Selfridges soaking it all in. I got to visit MUJI for the first time- which meant picking up some very exciting skincare and giving myself a very stern talking to so I didn't bring ALL the storage solutions back on the train with me.  I got to spend an evening singing along to Beyonce and ABBA with the Lady Boys of Bangkok. And I got time to start trying to plan the big move to Bournemouth in a couple of months! Exciting things are coming people- exciting things like sandy beaches!

SUNDAY JOURNAL 2.0

This week has been a week of indulgences and a week of firsts. This week I juiced for the first time. I learned that green juice is an acquired taste. I learned that broccoli in no way contains a high water content. And I learned you do need to use the cap on top of the juicer or you will end up with bits of ginger and apple ALL over the kitchen. This week I also had the pleasure of watching the Eurovision song contest for the first time. I learnt that it is possible for an hour and a half of music to require 4 hours of television coverage. I learnt that (apparently) there are 27 different traditional Austrian activities, and I learnt that Israel is part of Europe?!?! Most importantly, this week sees the start of my first ever bank holiday weekend off since moving to the UK. When you work in retail that is near on impossible! So far I have eaten ALL the food, slipped back into drinking ALL the tea and spent an inordinate amount of time lying in bed. There's a potential day trip on the cards on Monday but that is it. I could definitely get used to this.

  4. Spending last Sunday wining and dining with my bestest buddy.
  5. Tasting my first ever perfectly pH balanced water in a paper carton... I have never been so excited about water. Wild, I know. Aquapax you made me very happy!
